1.凤爪整理干净,剪掉趾甲,葱切段,老姜切片$aLi5D~%DF;Ff"o

2.凤爪稍微飞一下水

3.捞出后沥干水分,将凤爪从中间一剁为二,便于泡制的时候入味,锅洗净,重新入水,放入凤爪、料酒、葱段、姜片煮至凤爪断生$m:C

4.凤爪捞出后放入冰水中泡凉,水中加冰块可以让凤爪表皮收紧,口感更脆,为了让凤爪更清爽,我换了三次冰水

5.将泡凉的凤爪捞出沥干水分,取一容器,放入有泡椒、泡姜、泡花椒、泡大蒜的泡菜水适量,将凤爪放入里面,视泡菜水的咸度决定加不加盐,泡菜水一定要没过凤爪
