做法:半锅水加姜片/葱段/料酒烧开,放进海螺烫煮4-5分钟,捞起后马上泡进冰水五分钟,用小叉剔出肉,去除中段的黄/绿色肠肚。肉切片摆盘,尾部回锅再烫3-4分钟后捞起摆盘。撒上葱丝/嫩姜丝,淋上生抽一大匙,白胡椒粉少许,泼上两大匙滚油即可。火侯掌握恰当,螺肉柔软爽脆,味道清甜滋美!
