红糟带鱼

做法 :四大匙油烧热,放进葱段/蒜/姜/辣椒爆香后捞起摆盘。放进带鱼块煎至呈金黄色, 捞起滤干。所有调味料拌均,加两大匙清水烧开后放回鱼块拌煮至汁收干即可。这道带鱼味道鲜香,外酥内嫩,送粥最佳!3n

***煎鱼法 :很多网友经常抱怨将鱼煎得皮破肉碎,惨不忍睹,毫无卖相可言。最根本的问题其实就是沾锅。就算是用不沾锅(NON-STICK PAN),不小心的话也有可能煎坏的。

(1)鱼打理干净后一定要充分抹干水份,必要的话也可撒上少许太白粉抹均鱼身。鱼肉厚的话在两面各划几刀以便快熟。j#k8^u"k"o6\/\
