做的时候还应该放点黄豆或者山楂干,这样牛肉更容易烂一些。楼主说的加入豆酱也是这个原理吗?

说几句 楼主别生气 从选料上不是很正确 应该选同样的位置 看照片有牛腱子和牛腩 问一下它们熟的时间一样吗 生时改刀也不美 这直接影响出品的效果和入口好不好嚼 我怕塞牙 药料应该放在纱布里煮一会拿出来不让药料味盖住牛肉本身的香 老师傅都说羊不韭牛不姜 所以姜片就别放了 我感觉放啤酒不如放白酒可以增香调料里加上牛肉粉味道会更好 蘸料应该是蒜泥汁 解腻增香促进吸收 冒犯之处见谅:tongue

我在家里也经常做,不过辅料没有楼主那样多,但看色彩,楼主做的酱牛肉一定非常美味!
